Olive Oil mainly used as extra-virgin olive oil (EVOO)
Olive oil is ~70–80% oleic acid.
It contributes by:
-reducing inflammation
-improving membrane lipid composition
-lowering oxidative stress compared to omega-6-rich oils
But oleic acid alone does not account for the strongest anticancer effects—those come from the phenolic fraction (especially oleocanthal).
